Crockpot Chicken Chili

Ingredients

  • 1- 15 oz. can Black beans drained and rinsed
  • 1- 15 oz. can corn undrained
  • 1 can Rotels tomatoes undrained
  • 1 pkg. ranch dressing mix
  • 1 tsp. cumin
  • 1 T. Chili powder
  • 1 tsp. onion powder
  • 1- 8 oz. pkg. light cream cheese
  • 1/2 - 1 lb. Chicken breasts
  • 1/4 tsp. Cayenne pepper
  • 1/2 tsp. garlic powder
  • 1/2 tsp. pepper
  • 1 c. onion diced
  • 1 T. olive oil
  • 2 garlic cloves minced

Instructions

  • In a large skillet, heat oil and cook onion for 8 minutes, then add garlic and cook for 1 minute.
  • In a crockpot, on low heat, add chicken, cooked onions and garlic, black beans, corn, Rotels, ranch mix, and all seasonings. Stir and add cream cheese on top.
  • Cover and cook for 6-8 hours. Before serving, shred chicken.
