Instructions
  1. Combine onion, pepper, zucchini, mushrooms and 1/4 C. broth and bring to a boil.
  2. Reduce heat and simmer covered for 5 minutes.
  3. Add remaining ingredients except for cheese.
  4. Simmer 5-10 minutes or until veggies are tender.
  5. When serving, sprinkle with cheese.
