Instructions
  1. Slice each potato 3/4 of the way through vertically (slice thinly like an accordion.)
  2. Roll potatoes in combination of oil and butter.
  3. Put potatoes in a shallow pan.
  4. Pour remaining butter over potatoes.
  5. Season with salt and pepper.
  6. Bake at 375 degrees for 2 hours, basting with butter.
  7. Sprinkle cheese over potatoes and bake until cheese melts.
  8. Yield: 6-8 servings.
