Rhubarb Cake

Ingredients

  • 1/2 c. shortening
  • 1-1/2 c. brown sugar
  • 1 egg
  • 1 tsp. vanilla
  • 2 c. flour
  • 1/2 tsp. salt
  • 1 tsp. baking soda
  • 1 c. sour milk
  • 2 c. rhubarb cut fine
  • 1/2 c. sugar
  • 1 tsp. cinnamon
  • 1/2 c. nuts

Instructions

  • Preheat oven to 350 degrees.
  • Cream shortening and sugar, egg and vanilla.
  • Add sour milk alternately with dry ingredients.
  • Stir in rhubarb.
  • Pour into a 9x13” greased pan.
  • Mix topping ingredients and sprinkle on top before baking.
  • Bake for 45 minutes.
  • Serve plain or with whipped cream.
