British Shortbread Cookies

My mom who passed last year at the age of 95 made these every Christmas. She brought this recipe with her from England in the 40s when they moved to the States. They were always a favorite for family gatherings and baked goods for friends. When my brother served in Viet Nam, Mom made these shortbread cookies and would send them to him so he could have a part of home with him. I remember helping her make these, measuring ever so carefully and they are always so delicious!
1 lb Butter
4 1/2 Cups of Flour
1/2 Cup of Rice Flour
1 Cup of Sugar
Mix flours and sugar gradually add to butter.
Knead dough in basin, then pat into 13×16 pan which has been lightly greased. Press and smooth.
Bake at 300 degrees for 45 minutes.
Take out and mark with a fork and slightly cut through to make individual cookies.
Put back in oven for 15 minutes.
Leave in pan until cold.
Enjoy with a nice cup of tea!
