Sugar Drop Cookies

Ingredients:

2 cups all purpose flour, 2 tsp baking powder, 1/2 tsp salt, 2 large eggs, 3/4 cup sugar, 2/3 cup vegetable oil, 2 tsp vanilla, 1 tsp lemon zest

Directions:

In a mixing bowl, add flour, baking powder, and salt. mix well. In large bowl whisk eggs until blended, add sugar, oil, vanilla and lemon zest. mix well. stir dry ingredients into the egg mixture. stir until well blended. Chill. cover for 30 minutes. Preheat oven at 400 degrees.
On greased cookie sheet drop cookie dough by teaspoon, 2 inches apart, press top town, sprinkle with sugar. bake for 8 minutes.
