Honey Taffy


Cooking spray, 1 lb. Honey (Galena Honey Company), Butter, Wax Paper
Optional : Large Coarse Salt, Smoke Sea Salt, Sesame Seeds, Crushed Red Pepper


1. Line a baking sheet with parchment paper, lightly coat with cooking spray. 2. Place honey in a medium sauce pan. 3. Cook over medium heat, uncovered, until honey begins to boil. About 8 minutes. 4. Continue cooking until candy thermometer registers 280 degrees. About 10 minutes. 5. Quickly pour mixture onto prepared pan, spreading evenly, cool 20 minutes. 6. Lightly spray your hands with cooking spray. 7. Fold honey over itself to form a ball. 8. Stretch honey into a strand about 2 feet long. 9. Double strand back onto itself twice, pressing ends together. 10. Continue piling and folding honey for about 5 minutes, or until color changes from dark tan to a soft tan.11. Wrap in plastic wrap coated with cooking spray, and chill 10 minutes. 12. Coat a knife with cooking spray, and cut taffy into 4 equal parts. 13. Roll each piece into a 12 inch log, cut each log into 6 pieces.14. Roll each piece into a log, and wrap each piece in wax paper coated butter. 15. Optional: You can top taffy with large coarse salt, smoked sea salt or crushed re pepper.

My family and friends enjoy this as it is different. If you love honey you will love this. The topping of large coarse salt and crushed red pepper add a nice contract to the sweetness. This also allows us to visit our favorite honey vendor at the farmer’s market.
