Instructions
  1. Cook chicken in olive oil with salt and pepper. Cool and dice or shred. Set aside.
  2. To large pan, add butter, garlic, carrots and celery. Saute until tender.
  3. Add flour to form a roux; cook for 1-2 minutes.
  4. Add broth and half and half, stirring constantly.
  5. Add chicken and bring to a boil. Turn down to simmer.
  6. Cook gnocchi according to package directions.
  7. Drain and add to soup along with spinach. Heat through and serve.
