Fred’s Famous Pecan Crispies
1 cup softened butter
2 1/2 cups brown sugar (packed)
2 1/2 cups flour
1/4 tsp salt
1/2 tsp baking soda
1 cup finely chopped pecans
Cream butter and sugar; add eggs and beat until blended. Add dry ingredients and nuts. Drop by teaspoonfuls onto greased cookie sheet, leaving space for cookies to SPREAD. Bake at 375 for 8 to 10 minutes. Cookies will appear puffy when removed from oven, then immediately settle into crispy, yet chewy heavenly wafers.

The first time I made this recipe was over 30 years ago and they were a HUGE hit. My wife is usually the cookie baker in the house, but family members tell me to “Call when you’re making your famous Pecan Crispies”. Like certain potato chips, you can’t eat just one and a batch can disappear in minutes!
