Fool Proof, Yummy, Microwave Caramels
Ingredients:
2 sticks of butter
1 cup corn syrup
2 cups brown sugar
1 can of sweetened condensed milk
1 tsp. vanilla to add at the end
Directions:
Melt the butter in a 3 qt. microwavable dish. Add sugar, syrup and condensed milk. Cook on high for 15 minutes stirring every 5 minutes. Add vanilla and stir down. Butter a 9″ x 13″ pan. Pour the cooked caramel into the buttered dish and cool. Cut and wrap in waxed paper squares.
Add-in option before pouring: Cup or more of chopped pecans

This is quick, few ingredients, one cooking dish and very tasty. I have never had a batch not be a success. I used to cook a caramel on the stove that could be under cooked (spoon caramels, haha) or overcooked (tooth breaking hard). These are the first things my guest go for on my Christmas cookie and candy tray.
