Pimento Cheese

Ingredients:
1 large sweet onion, chopped
3 (4 oz. ) jars sliced pimentos, drained
2 pounds extra-sharp Cheddar cheese, shredded
2 1/2 cups Duke mayonnaise
Kosher salt
Directions:
Puree onion and pimentos in a food processor until smooth, about 30 seconds. Combine the onion mixture, shredded cheese and mayonnaise in a bowl. Season with Kosher salt. Cover and refrigerate at least 2 hours. Yield: 2 quarts. For gifting, I like to use 8 oz. size jelly jars ( the quilted ones look nice). Add a small ornament or jingle bells to a ribbon tied around the neck of the jar. You could add a small box of butter or pretzel crackers to complete the gift.
