Cream of Asparagus Soup

Ingredients

  • 1 lb. asparagus cut into small pieces
  • 1/2 med onion chopped
  • 2 T. butter
  • 2 T. flour
  • 4 c. chicken broth
  • 1/2 c. cream (optional)
  • Salt and pepper to taste

Instructions

  • Saute’ onion in butter for 3 minutes.
  • Stir in flour.
  • Add chicken broth slowly.
  • Add asparagus pieces.
  • Cover and simmer for 20 minutes or until asparagus is tender. This can be pureed, if desired.
  • Add cream, salt and pepper to soup and reheat.
