Cream of Asparagus Soup
Ingredients

lb.
asparagus
cut into small pieces
1/2
med
onion
chopped
2
T.
butter
2
T.
flour
4
c.
chicken broth
1/2
c.
cream
(optional)
Salt and pepper to taste
Instructions
Saute’ onion in butter for 3 minutes.
Stir in flour.
Add chicken broth slowly.
Add asparagus pieces.
Cover and simmer for 20 minutes or until asparagus is tender. This can be pureed, if desired.
Add cream, salt and pepper to soup and reheat.
