Tomato Pie

- 1 9-inch pie shell baked and cooled
- 2-3 large tomatoes thickly sliced
- Pepper to taste
- Fresh basil chopped
- Fresh chives chopped
- 2-3 green onions chopped
- 1 cup mayonnaise
- 1 cup cheddar cheese grated
Preheat oven to 350 F.
Slice tomatoes, sprinkle with salt, place in a strainer and let drain. Pat dry.
Place drained tomatoes in the baked pie shell and sprinkle with pepper to taste.
Sprinkle with basil, chives and green onions.
Combine mayonnaise and cheddar cheese and spread over tomatoes.
Bake for 30 minutes. Note: use 1/4 teaspoon dried herbs if fresh aren’t available.
