Extra Tender Pancakes

  • 2/3 cup milk
  • 1 egg slightly beaten
  • 1/4 cup melted butter
  • 1 cup flour
  • 1/2 cup powdered sugar
  • 1/4 teaspoon Salt
  • 2 teaspoons baking powder


  • Mix egg, milk and butter.
  • Sift together flour, powdered sugar, baking powder and salt.
  • Stir in milk mixture just until moistened.
  • Heat lightly greased griddle until hot.
  • For each pancake, pour about 1 tablespoon batter onto grill.
  • Cook until bubbles appear evenly over top and turn. Cook until golden. This makes 8 or 9 small pancakes.
