Sweet Potato Black Bean Burger

Ingredients

  • 1 15-ounce can Black beans drained and rinsed
  • 6 tablespoons breadcrumbs
  • 3/4 cup sweet potato baked and mashed
  • 3 tablespoons fresh cilanatro chopped
  • 1/3 cup red onion diced
  • 1 teaspoon fresh garlic minced
  • 3/4 teaspoon Salt
  • 1 teaspoon Black pepper
  • 2 tablespoons olive oil
  • 1 tablespoon cider or white vinegar
  • 2 tablespoons Lime Juice
  • 1/2 jalapeno, deseeded and minced optional

Instructions

  • Preheat oven to 375 F. Line a baking sheet with parchment paper or coat with cooking spray.
  • Place beans, breadcrumbs, sweet potato, cilantro and onion in food processor and pulse until all ingredients are well combined.
  • Add garlic, salt, pepper, olive oil, vinegar, lime juice and jalapeno. Mix thoroughly with a spoon.
  • Divide mixture into six and put on parchment paper. Push with fingers into a burger shape. If you like your burgers crispy, sprinkle more breadcrumbs on burgers and gently pat. Bake for 25 minutes. Note: if you don’t have a food processor, it works fine to do it by hand, just mash the mixture together well.
