Watermelon Feta Mint Salad

Servings 12 servings


  • 7-8 cups chilled watermelon cubed
  • 1/2 c. olive oil
  • 3 limes juiced
  • 1-1/2 t. Salt
  • 1/2 t. pepper
  • 1 c. chopped fresh mint leaves
  • 1-1/2 c. crumbled feta cheese


  • This needs to be made less than one hour before serving.
  • Drain the watermelon in a colander.
  • In a jar, combine oil, lime juice, salt and pepper. Shake to combine.
  • In a large bowl, combine watermelon and dressing. Gently mix.
  • Add mint and feta and mix carefully.
