Potatoless Potato Salad

Course Salad

Ingredients

  • 1 head cauliflower
  • 2 c. Celery diced
  • 1 c. onion diced
  • 4 hardboiled eggs diced
  • 2 c. mayo
  • 1/4 c. Vinegar
  • 1/4 t. pepper
  • 1 t. Salt
  • 2 t. sweetener any kind

Instructions

  • Cut the cauliflower into florets and steam cook until tender.
  • Combine cooked cauliflower, celery, onion and eggs and set aside.
  • Mix mayo, vinegar, pepper, salt and sweetener together.
  • Pour over cauliflower mixture and mix well.
