Breakfast Zucchini Casserole

Ingredients

  • 1 c. chopped onion
  • 4 c. sliced zucchini
  • 6 T. butter
  • 8 eggs
  • 1/3 c. milk
  • 1 c. Mozzarella cheese
  • 1 c. Colby Jack cheese
  • 2 c. shredded hash browns thawed
  • 2 T. dried parsley flakes
  • 1/2 t. seasoned salt
  • 1/2 t. pepper
  • 1/4 t. basil
  • 1/4 t. oregano
  • 2 t. Dijon mustard

Instructions

  • In a large skillet, saute' zucchini and onion in butter til tender.
  • In a large bowl, combine eggs, cheeses, seasonings, hash browns, milk and zucchini mixture.
  • Pour into a greased 9x13” pan.
  • Bake at 375 degrees for 20-25 minutes or until knife inserted near center comes out clean.
