Easy Cobbler

Ingredients

  • 4 C. fresh or frozen fruit
  • 1 C. sugar
  • 1 lg. vanilla Jell-O instant pudding mix
  • 1/2 C. oil
  • 1 C. sugar
  • 1 egg
  • 1 C. flour
  • 1 tsp. baking powder
  • 1/2 C. milk

Instructions

  • Place fruit in a 9 x 13 inch baking dish (a dish slightly smaller seems to work best).
  • Sprinkle sugar over fruit, then sprinkle the pudding mix over the fruit and sugar.
  • For the topping, cream together oil, sugar and egg.
  • Gradually add the flour, baking powder and milk. Stir until well blended.
  • Pour over fruit mixture.
  • Bake at 350 degrees for 40-60 minutes. Note: Peaches or blackberries work very well with this recipe.
