Sweet Potato Casserole with Glazed Topping

Ingredients

  • 3 cups cooked mashed sweet potatoes
  • 3 eggs
  • 1-1/4 teaspoons vanilla
  • 1/2 cup granulated sugar
  • 3/4 cup melted butter
  • 1/3 cup whole milk
  • Topping:
  • 1 cup light brown sugar
  • 1/3 cup flour
  • 1 cup chopped pecans
  • 1/3 cup melted butter

Instructions

  • Preheat oven to 350 F. Combine first 6 ingredients and mix well. Put in a buttered 12x12-inch casserole dish. Mix together topping ingredients and crumble on top of sweet potato casserole. Bake for 25-30 minutes.

Notes

Tastes like dessert rather than a vegetable side dish; really easy.
