Ingredients
1cupshredded apple
1/2cupcraisins or cranberries
1/2cupshredded carrot
1/2cupchopped walnuts or pecans
1cupfresh or thawed blueberries
1/4teaspoonsalt
1-1/4cupwhole wheat flour
1-1/2teaspoonsbaking powder
1teaspoonbaking soda
1teaspoonground cinnamon
1teaspoonground coriander
1egg
1/2cupvegetable oil
Instructions
Preheat oven to 375 F. In small bowl, mix flour, baking powder, baking soda, cinnamon, coriander and salt. In large bowl, combine apple, craisins, carrot, nuts and blueberries. Stir the contents of the two bowls together until well mixed. In small bowl, beat together egg and oil. Add mixture into large bowl until mixed together. Put into paper cup lined muffin pan. Bake 22 minutes.
