Fresh Apple Cake

- 1 cup vegetable oil
- 2 cups all-purpose flour
- 1 teaspoon baking soda
- 1 teaspoon cinnamon
- 1/4 teaspoon salt
- 2 cups apples peeled and chopped
- 1 cup walnuts chopped
Frosting:
- 1/2 cup butter softened
- 1 pound powdered sugar
- 8 ounces cream cheese softened
- 1 teaspoon vanilla extract
Preheat oven to 350 F. Grease and flour an 8X13-inch pan.
Beat sugar, eggs and oil together with mixer until well blended. Mix in flour, baking soda, cinnamon and salt. Fold in apples and walnuts.
Pour into prepared pan. Bake 30-40 minutes, or until done.
Blend all frosting ingredients together and spread on the cooled cake.
