Line a 9X9-inch glass casserole dish with parchment paper, covering the sides, too.
In a large saucepan, add sugar, syrup, honey and water and bring to medium heat. Stir well to combine.
When the mixture reaches a boil, heat without stirring until it reaches 300 F. Use a candy thermometer.
Once it reaches 300 F, remove from heat and quickly add baking soda. Mix with a metal whisk for 5 seconds and pour into the prepared casserole dish.
Leave dish where it sits for at least 2 hours.
Once it has cooled fully, remove it from the dish and onto a solid surface. Using a mallet, break up candy.
Pour chocolate chips into a double boiler with 2 tablespoons of butter. Melt and stir until silky.
Line a tray with parchment paper. Dip pieces of candy into chocolate and place on the tray.
Refrigerate until chocolate hardens. Place pieces into an airtight container and keep refrigerated.
