John’s Make-A-Meal Soup

- 1 pound ground turkey
- 1 onion chopped
- 1 tablespoon extra virgin olive oil
- 4 cups water
- 3 chicken bouillon cubes
- 1 teaspoon salt
- 1/4 teaspoon pepper
- 1 bay leaf
- 1/2 teaspoon powdered thyme
- 3 carrots diced
- 3 celery stalks diced
- 1/4 head cabbage cut into 1-inch chunks
- 3 tablespoons uncooked rice
- 1 8-ounce can tomato sauce
- 1 15-ounce can red beans undrained
- 1 28-ounce can diced tomatoes
In a Dutch oven or large pot, cook ground turkey and onion in oil until onion is tender and turkey is cooked.
Add remaining ingredients. Bring to a boil. Cover and simmer for 30 minutes.
Remove bay leaf before serving.
