John’s Make-A-Meal Soup

Ingredients

  • 1 pound ground turkey
  • 1 onion chopped
  • 1 tablespoon extra virgin olive oil
  • 4 cups water
  • 3 chicken bouillon cubes
  • 1 teaspoon salt
  • 1/4 teaspoon pepper
  • 1 bay leaf
  • 1/2 teaspoon powdered thyme
  • 3 carrots diced
  • 3 celery stalks diced
  • 1/4 head cabbage cut into 1-inch chunks
  • 3 tablespoons uncooked rice
  • 1 8-ounce can tomato sauce
  • 1 15-ounce can red beans undrained
  • 1 28-ounce can diced tomatoes

Instructions

  • In a Dutch oven or large pot, cook ground turkey and onion in oil until onion is tender and turkey is cooked.
  • Add remaining ingredients. Bring to a boil. Cover and simmer for 30 minutes.
  • Remove bay leaf before serving.
