Mini Angel Food Cakes

- 9 egg whites
- 1/2 cup flour
- 1 teaspoon cream of tartar
- 1/4 cup powdered sugar
- 3/4 cup granulated sugar
- 1/2 teaspoon vanilla
Preheat oven to 350 F.
Place egg whites in mixing bowl and let sit for 10 minutes.
Sift flour, powdered sugar and cream of tartar in separate bowl. Set aside.
Beat egg whites until stiff peaks form and then continue to beat while adding the granulated sugar until well mixed.
Add vanilla while mixing and then the flour mixture until well combined.
Pour into greased and floured mini cake or loaf pans. This recipe should make around 6 cakes.
Bake for 30-35 minutes until golden light brown. Take out and turn upside down on wire rack to cool.
Garnish with favorite berries, whipped topping and powdered sugar.
