Ingredients
Crust:
1-1/2cupsflour
3/4cupbuttersoftened
1/2cuppowdered sugar
Filling:
2eggs, plus 1 egg yolk
1cupsugar
1teaspoonvanilla extract
1/2teaspoonsalt
1teaspoonbaking powder
1/3cupflour
1tablespoonlemon juice
1/2cuppecanschopped
3cupspeachespeeled and sliced
Instructions
Preheat oven to 350 F.
Mix together the flour and powdered sugar in the bottom of a 9X13-inch baking dish, then mix in the softened butter until well blended and a dough forms.
Press dough in the bottom of the pan and 1 inch up the sides. Bake for 15 minutes.
In a large mixing bowl, beat together the eggs, sugar, vanilla, salt, baking powder, flour and lemon juice. Fold in peaches and pecans.
Pour filling over the baked crust and return to the oven for 35 minutes more. Top will be light golden brown and set in the center.
Notes
Replace the peaches with any fresh fruit in season.
