Quick Fruit and Lemon Drops

- 1/2 cup sugar
- 1 box lemon cake mix
- 1/3 cup water
- 1/4 cup butter softened
- 1 egg
- 1 tablespoon lemon peel grated
- 1 cup mixed dried fruit bits
Preheat oven to 350 F.
Grease cookie sheets or use parchment paper.
Place sugar in a shallow bowl.
In a large bowl, beat cake mix, water, butter, egg and lemon with a mixer on low speed until well blended. Fold in fruit bits until evenly distributed.
Shape dough by heaping tablespoonfuls into balls and roll in sugar to coat.
Place 2 inches apart on prepared cookie sheets. Bake 12-14 minutes or until set.
Cool cookies on sheet pan for 2 minutes and remove to cool completely on a wire rack.
