uncooked green lentils

olive oil

medium yellow onion
diced

green pepper

garlic

chili powder

oregano

tomato sauce

tomato paste

tablespoons
maple syrup

tablespoon
yellow mustard

kaiser rolls or buns
Instructions
Put the lentils in a small pot and pour in 4 cups of water. Cover and bring to a boil. Reduce heat and simmer for 20 minutes, until lentils soften. Drain and set aside. While lentils simmer, heat a medium pot over medium heat and add in oil. Sauté the onion and pepper for 7 minutes, until soft. Add the garlic and sauté 1 minute longer. Add the cooked lentils, chili powder, oregano and salt, and mix. Add the tomato sauce and paste. Cook for 10 minutes. Mix in the maple syrup and mustard. Turn off the heat and let sit for 10 minutes before serving on kaiser rolls or buns.
