Tomato Soup

Ingredients

  • 4 cups fresh tomatoes chopped
  • 1 onion chopped
  • 2-3 teaspoons Italian seasoning
  • 2 cups chicken broth
  • 2 tablespoons margarine or butter
  • 2 tablespoons flour
  • 1 teaspoon salt
  • 1-2 teaspoons sugar

Instructions

  • In a stock pot over medium heat, combine tomatoes, onion, Italian seasoning and broth. Bring to a boil and simmer for 20 minutes to blend flavors.
  • Remove from heat and run through a food mill. Discard what is left in the food mill.
  • In a stock pot, melt margarine or butter and stir in flour until browned. Gradually whisk in the tomato mixture.
  • Season with salt and sugar, to taste.
