Balsamic Tomato Salad

Ingredients

  • 2 pints cherry tomatoes halved
  • 1 shallot thinly sliced
  • 2 tablespoons extra virgin olive oil
  • 2 tablespoons balsamic vinegar
  • 1 clove garlic minced
  • Salt and pepper to taste
  • 1/2 ounce fresh basil leaves sliced into thin ribbons
  • 6 ounces feta cheese

Instructions

  • In a large bowl, stir together tomatoes and shallots.
  • In a small bowl, mix olive oil, vinegar, garlic, salt and pepper.
  • Stir dressing into tomato mixture.
  • Fold in basil leaves and feta cheese, reserving some for topping.
  • Chill for 20 minutes.
  • Before serving, top with remaining basil and feta cheese.
