Balsamic Tomato Salad

Ingredients
- 2 pints cherry tomatoes halved
- 1 shallot thinly sliced
- 2 tablespoons extra virgin olive oil
- 2 tablespoons balsamic vinegar
- 1 clove garlic minced
- Salt and pepper to taste
- 1/2 ounce fresh basil leaves sliced into thin ribbons
- 6 ounces feta cheese
Instructions
- In a large bowl, stir together tomatoes and shallots.
- In a small bowl, mix olive oil, vinegar, garlic, salt and pepper.
- Stir dressing into tomato mixture.
- Fold in basil leaves and feta cheese, reserving some for topping.
- Chill for 20 minutes.
- Before serving, top with remaining basil and feta cheese.
