Diet Watchers Chicken Salad

Ingredients

  • 1 t. Mayonnaise
  • 1 t. Lemon juice
  • 1/4 t. Salt
  • Dash of each pepper thyme and ground sage
  • 4 oz. skinned boned, cooked chicken diced
  • 2 T. cucumber seeded diced and pared
  • 1 T. each diced carrot celery and red onion
  • 1 t. chopped fresh parsley
  • 2 leaves iceberg or romaine lettuce

Instructions

  • In a small bowl, combine mayonnaise, lemon juice, salt, pepper, thyme and sage.
  • Add remaining ingredients, except lettuce, and toss well.
  • Cover and chill.
  • Serve on lettuce leaves.
  • Makes one serving of 265 calories.
