Ingredients
- 1 t. Mayonnaise
- 1 t. Lemon juice
- 1/4 t. Salt
- Dash of each pepper, thyme and ground sage
- 4 oz. skinned, boned, cooked chicken diced
- 2 T. cucumber seeded, diced and pared
- 1 T. each diced carrot, celery and red onion
- 1 t. chopped fresh parsley
- 2 leaves iceberg or romaine lettuce

Instructions
- In a small bowl, combine mayonnaise, lemon juice, salt, pepper, thyme and sage.
- Add remaining ingredients, except lettuce, and toss well.
- Cover and chill.
- Serve on lettuce leaves.
- Makes one serving of 265 calories.
