Grandma Dean’s Mashed Potato Doughnuts

mashed potatoes

sugar

heavy cream

eggs

vanilla extract

flour

teaspoons
baking powder

cup
powdered sugar
Instructions
In a large bowl, combine mashed potatoes, sugar, cream, eggs and vanilla.
Slowly add flour and baking powder until just incorporated.
Roll into tablespoon-sized balls. This dough is sticky, so spray your hands with cooking spray.
In a fryer or a pot, heat 3 inches of vegetable oil to 350 F.
Carefully add a few dough balls at a time; don’t overcrowd.
Fry for 2–3 minutes, turning once, until golden brown on all sides.
Use a slotted spoon to remove the doughnuts and drain on paper towels.
Let cool slightly before coating with powdered sugar.
Notes
This recipe may not work well with herbed mashed potatoes. Add 1/2 teaspoon salt if using plain, unseasoned mashed potatoes.
