Grandma Dean’s Mashed Potato Doughnuts

Servings 3 dozen

Ingredients

  • 1 cup mashed potatoes
  • 3/4 cup sugar
  • 1/2 cup heavy cream
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 2-1/2 cups flour
  • 2 teaspoons baking powder
  • 1 cup powdered sugar

Instructions

  • In a large bowl, combine mashed potatoes, sugar, cream, eggs and vanilla.
  • Slowly add flour and baking powder until just incorporated.
  • Roll into tablespoon-sized balls. This dough is sticky, so spray your hands with cooking spray.
  • In a fryer or a pot, heat 3 inches of vegetable oil to 350 F.
  • Carefully add a few dough balls at a time; don’t overcrowd.
  • Fry for 2–3 minutes, turning once, until golden brown on all sides.
  • Use a slotted spoon to remove the doughnuts and drain on paper towels.
  • Let cool slightly before coating with powdered sugar.

Notes

This recipe may not work well with herbed mashed potatoes. Add 1/2 teaspoon salt if using plain, unseasoned mashed potatoes.
