Grandma Dean’s Mashed Potato Doughnuts

Ingredients
- 1 cup mashed potatoes
- 3/4 cup sugar
- 1/2 cup heavy cream
- 2 eggs
- 1 teaspoon vanilla extract
- 2-1/2 cups flour
- 2 teaspoons baking powder
- 1 cup powdered sugar
Instructions
- In a large bowl, combine mashed potatoes, sugar, cream, eggs and vanilla.
- Slowly add flour and baking powder until just incorporated.
- Roll into tablespoon-sized balls. This dough is sticky, so spray your hands with cooking spray.
- In a fryer or a pot, heat 3 inches of vegetable oil to 350 F.
- Carefully add a few dough balls at a time; don’t overcrowd.
- Fry for 2–3 minutes, turning once, until golden brown on all sides.
- Use a slotted spoon to remove the doughnuts and drain on paper towels.
- Let cool slightly before coating with powdered sugar.
Notes
This recipe may not work well with herbed mashed potatoes. Add 1/2 teaspoon salt if using plain, unseasoned mashed potatoes.
