Orange Citrus Salad

Ingredients

romaine lettuce or romaine hearts

can
mandarin oranges
drained, or 3 clementines or tangerines, peeled and cut into sections
1
red onion
thinly sliced
1/2
cup
dried cranberries
Dressing:

tablespoons
orange juice
2
tablespoons
red wine vinegar
1/2
cup
vegetable or olive oil
1
teaspoon
Dijon mustard
1/2
teaspoon
salt
Fresh ground pepper
to taste
Instructions
In a serving bowl, toss salad ingredients.
In a small bowl, whisk together orange juice and vinegar. Gradually whisk in oil and season with mustard, salt and pepper.
Dress salad shortly before serving.
