Orange Citrus Salad

  • 1 head romaine lettuce or romaine hearts
  • 1 can mandarin oranges drained, or 3 clementines or tangerines, peeled and cut into sections
  • 1 red onion thinly sliced
  • 1/2 cup dried cranberries


  • 2 tablespoons orange juice
  • 2 tablespoons red wine vinegar
  • 1/2 cup vegetable or olive oil
  • 1 teaspoon Dijon mustard
  • 1/2 teaspoon salt
  • Fresh ground pepper to taste


  • In a serving bowl, toss salad ingredients.
  • In a small bowl, whisk together orange juice and vinegar. Gradually whisk in oil and season with mustard, salt and pepper.
  • Dress salad shortly before serving.
