Orange Citrus Salad

Ingredients
- 1 head romaine lettuce or romaine hearts
- 1 can mandarin oranges drained, or 3 clementines or tangerines, peeled and cut into sections
- 1 red onion thinly sliced
- 1/2 cup dried cranberries
Dressing:
- 2 tablespoons orange juice
- 2 tablespoons red wine vinegar
- 1/2 cup vegetable or olive oil
- 1 teaspoon Dijon mustard
- 1/2 teaspoon salt
- Fresh ground pepper to taste
Instructions
- In a serving bowl, toss salad ingredients.
- In a small bowl, whisk together orange juice and vinegar. Gradually whisk in oil and season with mustard, salt and pepper.
- Dress salad shortly before serving.
