Cabbage Soup

Ingredients

  • 2 tablespoons olive oil
  • 1/2 onion chopped
  • 1 carrot peeled and diced
  • 1 celery rib diced
  • 1 clove garlic minced
  • 1/4 teaspoon pepper
  • 1/4 teaspoon Italian seasoning
  • 1 head cabbage chopped
  • 4 cups chicken broth
  • 1 16-ounce can diced tomatoes
  • Salt to taste

Instructions

  • Heat olive oil in a large pot over medium heat.
  • Add onion, carrot and celery and saute about 5 minutes.
  • Add garlic, pepper and Italian seasoning and cook for another minute.
  • Add in the cabbage and cook for 5 minutes, stirring frequently.
  • Pour in the broth and diced tomatoes. Stir and bring to a boil.
  • Lower the temperature and simmer for 20 minutes. Salt to taste.
