Cabbage Soup

Ingredients
- 2 tablespoons olive oil
- 1/2 onion chopped
- 1 carrot peeled and diced
- 1 celery rib diced
- 1 clove garlic minced
- 1/4 teaspoon pepper
- 1/4 teaspoon Italian seasoning
- 1 head cabbage chopped
- 4 cups chicken broth
- 1 16-ounce can diced tomatoes
- Salt to taste
Instructions
- Heat olive oil in a large pot over medium heat.
- Add onion, carrot and celery and saute about 5 minutes.
- Add garlic, pepper and Italian seasoning and cook for another minute.
- Add in the cabbage and cook for 5 minutes, stirring frequently.
- Pour in the broth and diced tomatoes. Stir and bring to a boil.
- Lower the temperature and simmer for 20 minutes. Salt to taste.
