Ingredients
- 15 slices fully cooked bacon
- 12 eggs
- 16 ounces cheddar cheese shredded
- 16 ounces colby jack cheese shredded
- 1 small jar jalapenos or can green chilies cooked dry or water squeezed out
Instructions
- Preheat oven to 350 F.
- Coat a 9x13-inch baking dish with nonstick cooking spray. Prepare bacon using package directions.
- In a bowl, beat the eggs together. In a separate bowl, mix the cheeses.
- Spread half the cheese on the bottom of the baking dish, layer on the bacon, then add the rest of the cheese. Slowly pour the eggs over the top of the cheese and sprinkle the jalapenos or green chilies over the top.
- Bake 40-45 minutes until the eggs are set. Let cool for 10 minutes before serving.
