Crunchy Corn Medley

Ingredients

  • 2 cups frozen peas thawed
  • 1 15-ounce can whole kernel corn drained
  • 1 15-ounce can white or shoepeg corn drained
  • 1 8-ounce can water chestnuts drained and chopped
  • 1 4-ounce jar diced pimentos drained
  • 8 green onions thinly sliced
  • 2 celery ribs chopped
  • 1 medium green pepper chopped
  • 1/2 cup vinegar
  • 1/2 cup sugar
  • 1/4 cup vegetable oil
  • 1 teaspoon salt
  • 1/4 teaspoon pepper

Instructions

  • In a large bowl, combine the first 8 ingredients.
  • In a small bowl, combine vinegar, sugar, oil, salt and pepper. Pour over corn mixture and mix well.
  • Cover and refrigerate for at least 3 hours. Stir again before serving with a slotted spoon.
