Peppermint Fudge Cookie Sandwiches

Ingredients:

3/4 c. semi-sweet chocolate chips
1/4 c. butter
1/2 c. sugar
1 egg
3/4 c. all-purpose flour
2 candy canes or 1/4 c. (8-10) crushed peppermint candies
1/4 c. white chocolate chips
12 mini foil-wrapped peppermint patties, unwrapped

Directions:

Preheat oven to 375. Combine butter and semi-sweet chocolate chips in a microwave safe bowl. Microwave 40-60 seconds or until smooth, stirring each 20 seconds. Add sugar and egg and blend well. Add flour; mix just until incorporated. Use a small cookie scoop and drop level scoops of batter 1 in. apart on a greased sheet pan. Bake 9-11 minutes or until edges are set. (Do not overbake.)

Meanwhile, place candy canes or peppermint candies in plastic bag and crush. Set aside. Place white chocolate chips in microwave safe bowl. Microwave 30-60 seconds or until melted and smooth.

After cookies have cooked immediately turn over half the cookies; top with peppermint patties and remaining cookies to form sandwiches. Drizzle white chocolate over cookies and immediately sprinkle with crushed candles.

Peppermint and mint flavored treats are a favorite for our family during the Christmas season. This recipe combines the melt in your mouth goodness of chocolate and mint with the crunch of peppermints. It is a favorite everywhere I take them!
