Boston Cream Candy
Ingredients:
1/2 pint whipping cream
2/3 cup white Karo syrup
2-1/4 cups granulated sugar
1 teaspoon vanilla
1-1/3 cups chopped pecans
Directions:
Cook cream, syrup and sugar until it forma soft ball (238 F). It will be medium brown and satiny when it is cooked enough. Beat until it thickens. Add vanilla and pecans and beat until stiff enough to pour into a buttered 9×9-inch pan. Cool and cut into squares.

This is a family favorite every time at Christmas. This recipe has been passed down for generations. It can be adjusted. Add 2 tablespoons of cocoa for chocolate fudge or swap vanilla for maple flavoring for maple fudge. We have tried it all three ways and they are all excellent.
