Cherry Delights
Ingredients:
1 Cup Margarine
1/2 Cup Sugar
1/2 Cup Light Corn Syrup
2 Eggs, separated
1 1/2 Cups Unsifted Flour
2 Cups Finely Chopped Nut
Candied Red & Green Cherry Halves (I use maraschino cherries)
Directions:
Mix margarine and sugar. Stir in corn syrup, egg yolks, and flour. Chill. Roll into 1-inch balls. If they get too sticky, chill the dough again for a bit. Dip into slightly beaten egg whites then nuts. Place on greased baking sheet. Press cherry half into center of each cookie. Bake in 325 degree F oven for 20 minutes. Makes 4 dozen. Can substitute nut halves for cherries.

I have been making these cookies at Christmas time since my girls were small (they are now grown and have children or grandchildren of their own). Don’t recall where I got the recipe, it was on a sheet with other cookies and candies usually reserved for Christmas but they do not last long at my house. They are very pretty and look great on a buffet table with other cookies. They also make great Christmas gifts.
