Crockpot Chicken Chili

Ingredients
- 1- 15 oz. can Black beans drained and rinsed
- 1- 15 oz. can corn undrained
- 1 can Rotels tomatoes undrained
- 1 pkg. ranch dressing mix
- 1 tsp. cumin
- 1 T. Chili powder
- 1 tsp. onion powder
- 1- 8 oz. pkg. light cream cheese
- 1/2 - 1 lb. Chicken breasts
- 1/4 tsp. Cayenne pepper
- 1/2 tsp. garlic powder
- 1/2 tsp. pepper
- 1 c. onion diced
- 1 T. olive oil
- 2 garlic cloves minced
Instructions
- In a large skillet, heat oil and cook onion for 8 minutes, then add garlic and cook for 1 minute.
- In a crockpot, on low heat, add chicken, cooked onions and garlic, black beans, corn, Rotels, ranch mix, and all seasonings. Stir and add cream cheese on top.
- Cover and cook for 6-8 hours. Before serving, shred chicken.
