Apple Pie Filling

Ingredients:

6 Pounds Apples
4 1/2 Cups White Sugar
1 cup cornstarch
2 teaspoons ground cinnamon
1/4 teaspoon ground nutmeg
2 teaspoons salt
3 tablespoons lemon juice
2 drops yellow food coloring
10 cups water

Directions:

Peel, core & slice apples. Fill the jars half way with apples. In a large pan mix sugar, cornstarch, cinnamon & nutmeg. Add salt and water & mix well. Bring to a boil and cook until thick and bubbly. Remove from heat and add lemon juice and food coloring. Pour hot syrup half way up on apples & then fill the jars with the rest of the apples & pour the hot syrup over apples to a 1/2 inch of top. Put hot lids on & put in a 250 degree oven on a cookie sheet for 20 minutes.
