Candied Pecans

Ingredients:
1/2 C. sugar
1/2 C. light brown sugar
1 TBSP. ground cinnamon
1 tsp. salt
16 ounces (4 cups) unsalted pecans
1 egg white
1/2 tsp. vanilla
1 tsp. water
Directions:
1. Preheat oven to 300 degrees. Line a large baking sheet with a Silpat mat or parchment paper. Set aside.
2. In a medium bowl, add sugars, cinnamon and salt. Combine together well. Set aside.
3. In a large bowl, whisk the egg white, vanilla and water together until frothy. Add the pecans and gently toss until all pecans are well coated. Add the sugars, cinnamon and salt mixture to the pecans and toss until pecans are covered.
4. Spread the pecans out in a single layer on the prepared baking sheet.
5. Bake for 40 – 45 minutes, stirring every 15 minutes. The sugar mixture will harden on the pecans.
6. Remove from the oven and let cool on baking sheet. When completely cool, store in airtight container. (Good for one month.)
