Microwave Peanut Brittle

Ingredients:

1 c raw peanuts
1 c sugar
1/2 c white corn syrup
1/8 tsp salt
1 tsp butter
1 tsp vanilla
1 tsp baking soda

Directions:

Stir together peanuts, sugar, corn syrup and salt in 1 1/2 quart casserole and microwave on High for 7-8 minutes, stirring well after 4 minutes.
Add butter and vanilla to syrup & blend well.
Microwave 1-2 minutes more.
Peanuts will be lightly browned and syrup very hot. Add baking soda and gently stir until foamy.
Pour onto lightly buttered cookie sheet; spread. Let cool 1/2 hour. When cool, break into pieces and store in airtight container. Freezes well.

**When my kids were in school, I often used this as gifts for their teachers, bus driver, and Sunday school teachers, and our mailman. I would wrap in cling wrap and place in a pretty Christmas tin, that you can buy at most dollar stores. **
