Greek Tomato Salad

Ingredients

  • 3 T. olive oil
  • 3 T. apple cider vinegar
  • 2 tsp. Lemon juice
  • 3-4 fresh tomatoes seeded and chopped
  • 1 cucumber seeded, peeled and chopped
  • 1 med. sweet onion diced
  • 1 4 oz. ctn. crumbled feta cheese
  • 1 15 oz. can garbanzo beans drained
  • 6-8 fresh basil leaves diced
  • Salt
  • Black pepper

Instructions

  • Combine olive oil, vinegar, lemon juice, salt and pepper until emulsified; stir in tomatoes, cucumber, onion, feta cheese, garbanzo beans and basil. Let sit at least 1 hour before serving.
