Greek Tomato Salad

Ingredients
- 3 T. olive oil
- 3 T. apple cider vinegar
- 2 tsp. Lemon juice
- 3-4 fresh tomatoes seeded and chopped
- 1 cucumber seeded, peeled and chopped
- 1 med. sweet onion diced
- 1 4 oz. ctn. crumbled feta cheese
- 1 15 oz. can garbanzo beans drained
- 6-8 fresh basil leaves diced
- Salt
- Black pepper
Instructions
- Combine olive oil, vinegar, lemon juice, salt and pepper until emulsified; stir in tomatoes, cucumber, onion, feta cheese, garbanzo beans and basil. Let sit at least 1 hour before serving.
