Kevin’s White Chili
- 5 chicken breast halves boneless, skinless
- 1 T. oil
- 2 med. Onions chopped
- 4 cloves garlic minced
- 2 (4-oz.) cans chopped green chilies
- 2 tsp. ground cumin
- 1/4 tsp. cayenne pepper
- 1 tsp. dried oregano
- 3 cans Great Northern Beans drained
- 20 oz. Monterey Jack cheese shredded
- Cook cubed chicken breast and onion in a stockpot until onion is transparent.
- Stir in garlic, green chilies, cumin, cayenne, pepper, oregano, beans and cheese.
- Simmer until cheese melts.
