Lemon Doodles

  • 1/2 cup margarine or butter, softened
  • 1-1/2 cups granulated sugar
  • 2 eggs
  • 2 tsps lemon extract
  • 1 tsp cream of tartar
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 2-1/2 cups unbleached flour, or a little more if needed
  • powdered sugar to roll dough in


  • Preheat oven to 400 F. In large bowl, combine ingredients in order given, mixing well after each addition. Dough has to be stiff enough to roll into balls. Roll into 1" balls and roll in powdered sugar. Place on parchment covered baking sheet and baking 8-10 minutes. Cool on rack.
